Andong Beef Roll
- 2 large apples cut into chunks
- 2 pears cut into chunks
- 2 cups strawberries, sliced
- 1 Tbs. soy sauce
- 1 Tbs. steak sauce
BEEF: Prepare the rice first. Place a sliced piece of prime rib on a cutting board. Sprinkle with salt and pepper. Spread 1/2-cup of black rice on the beef. Place 8 julienned carrots on the rice. Roll the beef slice and secure using string.
Heat the oil in a large skillet over medium heat. Place the beef roll in the pan and sear until golden brown on each side. Add the soju and flambe for 2 minutes. Remove the beef with a slotted spoon and set aside. Repeat procedure for the remaining pieces of meat.
SAUCE: Put the apple, pear and strawberry pieces into a blender and puree. Pour puree into a pan and bring to a boil. Reduce heat and simmer. Add a tablespoon of soy sauce and steak sauce. Stir mixture and set aside.
To Plate: Place the beef roll on a heated serving dish, spoon fruit puree over the roll and garnish with rosemary sprigs.
