Flat Iron Steak
- 1 10-ounce portion flat iron steak
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
Place the steak in sous vide bag and cook in a circulator set to 140 degrees F for 40 minutes.
Chill the steak to room temperature in the sous vide bag, then remove from the bag and sprinkle with the salt and pepper. Heat a saute pan over medium-high heat and quickly sear the steak on both sides. Serve while hot.
