George Martin's Maple-Roasted Butternut Squash
- 5 pounds butternut squash, peeled and cut into 1-inch cubes
- 1 stick (8 tablespoons) unsalted butter, melted
- 2 cups maple sugar (see Cook's Note)
Preheat the oven to 400 degrees F.
Toss the butternut squash, melted butter and maple sugar together in a large bowl to combine. Spoon the mixture into an 8-quart pot or Dutch oven. Cover and transfer to the oven. Cook for 1 hour, or until the squash is tender. Serve on a warmed plater.
