  1. Preheat the oven to 325 degrees F.
  2. Melt the butter in a saucepan, add the onions and garlic, and saute until soft. Set aside to cool completely.
  3. Combine the ground pork, ground chicken, diced chicken and chicken livers in a large bowl. Mix together until well incorporated. Sprinkle with salt and pepper. Add the sherry, cream, parsley, shallot, thyme, eggs, and the sauteed onion and garlic. Mix together well.
  4. Line a 9-by-5-by-3-inch loaf pan with the bacon slices, leaving some overhang. Press the meatloaf mixture into the pan and cover with the overhanging bacon.
  5. Set the loaf pan into a deep baking dish; fill the baking dish one-third of the way up with warm water. Transfer to the oven and bake until the meatloaf reaches an internal temperature of 155 degrees F, about 1 hour 30 minutes.
  6. Let cool, then invert; it should slide right out. The Hunk-a-Meat is ready to be served!
