Sandra's Candied Yams
- 8 medium yams
- 1 stick butter
- 3 cups sugar
- 2 tablespoons vanilla extract
- 2 teaspoons ground cinnamon
- 2 teaspoons ground nutmeg
Peel the yams and cut into 1-inch discs. Place the yams in a large pot. Add the butter, sugar, vanilla extract, cinnamon, nutmeg and 1/2 cup water. Cook on medium heat until the yams are fork tender and the syrup is thick.
