Ingredients

ROOSTICA PIZZA SAUCE:
  • One 28-ounce can San Marzano tomatoes
  • 1/4 cup extra-virgin olive oil
  • 2 teaspoons ground pepper
  • 2 teaspoons sea salt
  • 1/4 cup fresh basil leaves, torn

Directions

Special equipment: a 10-inch round baking pan with 2-inch-high sides

For the sauce: Work the tomatoes through a food mill into a large bowl. Mix in the oil, pepper and salt. Gently stir in the basil.

For the pizza: Preheat the oven to 500 to 550 degrees F. Lightly oil a 10-inch round baking pan.

Place the dough in the pan and press it down evenly. Drizzle with olive oil and sprinkle the garlic, Parmesan and oregano over the top. Spoon 5 ounces of the pizza sauce over the dough, and then layer the sausage and salami slices. Top with the mozzarella and a drizzle of olive oil. Cover the pan with foil and bake for 15 minutes. Remove the foil and bake until golden brown and bubbly, 5 minutes.
