Smoked Whitefish Pate 2
- 11 pounds smoked whitefish, flaked and deboned
- 3 pounds cream cheese
- 1 gallon salad dressing or mayonnaise
- 1/4 cup lemon juice
- 1/4 cup dried chives
- Buttercrackers, for serving
Slowly mix the whitefish in a large stand mixer fitted with a paddle attachmentuntil it is coarsely ground. Transfer to a large bowl. Add the cream cheese to the stand mixer bowl and whip until smooth. Then add the salad dressing, 2 cups water and lemon juice until fully combined. Return the fish the mixture the chives and gently whip until everything comes together. Serve with butter crackers if desired.
