Sonny Young's Pecan Veggie Balls

  • 4 cups seasoned breadcrumbs
  • 4 cups pecan meal
  • 4 cups shredded Cheddar
  • 12 eggs
  • 1/2 cup olive oil
  • 2 cups warm tomato sauce


In a large bowl, mix together the breadcrumbs, pecan meal and cheese with your hands. Then mix the eggs in a large bowl and add to the pecan mixture, and mix until thoroughly incorporated.

With your hands, shape the mixture into 1 1/2-inch pecan veggie balls and set on a sheet tray.

Heat the olive oil in a pan over medium-high heat. Fry each ball until golden brown, 3 to 4 minutes on each side. Remove from the heat, cover in tomato sauce and serve.
